Risotto Strachitunt: A Taste of Bergamo

1 min read

Creamy, rich and full of character, Risotto Strachitunt is a delicious expression of Bergamo’s mountain traditions. At the heart of this dish is Strachitunt DOP, a unique blue-veined cheese produced in the Val Taleggio using traditional methods passed down through generations. Its flavour changes with ageing, becoming more intense and pleasantly spicy, making it perfect for creating a truly distinctive risotto.

The recipe combines Carnaroli rice, Strachitunt DOP, butter, vegetable broth and a splash of white wine. The rice is slowly cooked with hot broth until perfectly al dente, then finished with Strachitunt and butter to create that characteristic creamy, “all’onda” texture. A few toasted walnuts or some flakes of Strachitunt can add an enjoyable contrast of flavours and textures.

But this is more than just a delicious Italian recipe: it is a way to discover the flavours, traditions and identity of the Bergamo area. The story of Strachitunt is deeply connected to Val Taleggio and to the generations of cheesemakers who continue to preserve this local tradition.
